My name is Karen Cendejas, and I’m proud to share our story with you. La Carreta is more than just a Mexican restaurant — it’s a piece of my family’s heart brought here from Guadalajara, Mexico. My dad, Arturo Cendejas, and I opened La Carreta in December 2018. We started small, selling snacks and drinks, just like the snack bars in Mexico. But what really brought people back was our birria — a slow-cooked beef stew with flavors passed down in our family for many years.

Before coming to Green Bay, we sold tacos in the busy streets of Guadalajara. When we moved here, we brought that same love for cooking with us. In November 2019, we moved La Carreta to Main St and introduced our famous Quesabirria tacos — cheesy, crispy, and packed with our family’s birria recipe. At first, La Carreta was more like a snack bar. When the pandemic hit, people started ordering our tacos for take-out. Now, our focus is sharing the taste of Mexico through every taco we make.
